EVERETT STREET BISTRO BRINGS EUROPEAN-STYLE CHARCUTERIE AND DINING TO PEARL DISTRICT NEIGHBORHOOD

Portland, OR, USA - 01/13/06 - Owner and designer Kyle Lynch blends European charm with modern amenities and a communal vibe

Portland, Oregon (January 12, 2006) - Urban dwellers and visitors can now savor European-style meats, patés and homemade soups and quiches at the new Everett Street Bistro at 1140 NW Everett Street in Portland's Pearl District neighborhood. The bistro, designed by Portland design firm, KL Design Group, offers a wide menu -- from breakfast, lunch and dinner to cocktails, and a delicatessen-style take-out counter. Everett Street owner and designer Kyle Lynch has transformed a former Toreffazione coffee shop into a full-service bistro with butcher-paper covered tables, a pressed tin ceiling, bistro tables, a cozy bar, and expansive windows with ample natural light. Executive chef Ethan Powell will update the menu seasonally to take advantage of regional ingredients. Powell is a graduate of the French Culinary Institute in New York and worked under the tutelage of Jacques Pepin, Andre Soltner and master sommelier, Andrea Immer. Powell was previously a sous chef and manager at Andina Restaurant in Portland.

"The bistro was designed to be accessible to neighbors looking for a quick bite to pre-theater dinners and late night cocktails and desserts," said Lynch. "The Everett Street Bistro resembles its sister restaurant, the Gower Street Bistro in Cannon Beach since both spots offer a communal vibe with shared plates and a casual sophistication."

European Cuisine with a Northwest Spin
Menu items tout ingredients sourced in the Pacific Northwest like the Everett Street Benedict with Dungeness crab, baked eggs, spinach and creole hollandaise($13.75) or the caramelized Walla Walla onions, new potatoes and blue cheese scramble ($9.75). Morning pastries add temptation - from Beignets ($2.50) to Pear Provence ($2.75) and brioche ($2). Lunch items vary from a Northwest salad with wild and gathered greens, Fourme Deí Ambert blue cheese, pan fried pancetta and garlicky pecans ($9) to a bucket of beer-braised peel and eat shrimp ($12). Dinner offers shared plates; salads and soups; quiche and pasta; and entrees including the signature meatloaf with Painted Hills all natural beef ground with spices and topped with mushroom gravy ($19) and the gnocchi with roasted morels with caramelized shallots and truffle marsala ($16). Desserts are available to go from the deli case or shared in the bistro and include Black Beauty cake ($6), Poached Pear ($5.50) and Bread Pudding ($5.50).

Classic Cocktails
Slip onto a bar seat and order one of Everett Street's classic cocktails from the Dragonfly with gin, ginger ale and lime to the Everett Street Car with Knob Creek, muddled oranges and limes and orange juice and the Cuba Libre with Bacardi rum, Coca-Cola and lime.

Bistro Design
